Cauliflower Buffalo Bites

"Crispy Bites"

Ingredients

1 head cauliflower cut into florets

1 cup buffalo sauce

1/2 cup sweet potato flour

1 tsp corn starch

1/2 cup water

1 tsp garlic powder

1 tsp paprika

1/2 tsp sea salt

1/4 tsp ground pepper

1/4 cup chopped cilantro

Highlights & Tips

Cut the florets into bite size pieces.  However don't cut them too small, they will end up becoming mushy and won't crisp up once baked.

Place the florets in the bowl of batter and coat well then toss them in a colander to drain the excess batter on the cauliflower.

You can bake the bites on parchment paper over a cookie sheet.  Spray the sheet with cooking spray to prevent sticking.

Turn the florets halfway through the cooking process so each side is brown and crisp.  These snacks are best served if baked right before serving.

Using a sheet pan is the best way to bake the cauliflower bites in the oven.

Line your sheet pan with parchment paper and this will help prevent burning of the bites and aid in keeping your pan clean!

Using a colander is an easy way to drain off the batter once the florets are fully coated.

Toss your cauliflower bites in a sauce and serve on a plate or wood platter along with your favorite dip or sauce!  Sprinkle the chopped cilantro over the plate for a pop of color.  Lay out your sauces in a small jar and serve with crisp carrot or celery sticks!

Use disposable paper food trays when entertaining makes for quick clean up!

Budget Tips

Purchase the entire head of cauliflower and cut up your florets.  This will save you money but also allow for control on the sizes of bites.  To save on hot sauce buy in bulk if you have the storage or use a dry rub and reconstitute.  We have a couple items the team prefers.

Food Combinations

Its always fun to serve a platter of fresh vegetable crudite! Crutite is fresh vegetables that are cute into bite size pieces to start ones appetite.  Serve along side some dips and nuts for a wide variety of snacks to grab easily.  Cauliflower Buffalo Bites and a Crudite dish are great tapas to serve when entertaining!

What to do with left over's or extra product?

If you have any left over cauliflower use it up in a hot Pho bowl, veggie taco, cauliflower bake or chop it up and throw it on a salad!  You can always eat this vegetable raw which has many benefits with all it's antioxidants!

DIRECTIONS

Preheat the oven to 425 degrees and line the baking sheet with parchment paper.  Cut the cauliflower into bite size pieces and discard the stem of the plant.

Make the batter by adding equal parts of potato flour, water and tossing in the spices, corn starch and salt and pepper.  The mixture should be pretty thick and almost like a paste.

Coat the cauliflower florets with the batter.  You can add the florets to the bowl of batter and toss around till well coated.  Then use a colander to drain off the excess batter.  This step helps to make sure the baked cauliflower is not mushy.

INGREDIENTS

Place the cauliflower bites on the parchment paper and bake in the oven for 15 minutes.  Turn the cauliflower halfway through the baking process to ensure the bites are brown on both sides and continue baking for another 15 minutes.
