Highlights & Tips

The longest part of this recipe is the cooking time for the sweet potato!  Once the potato is cooked it takes less than 10 minutes for golden crispy hash browns.

When I need to prep some hash browns I cook several potatoes all at once if I'm running low, then freeze the extra in bags so I can grab and cook up some hash browns quickly!

​

You can cook sweet potatoes in a Instant Pot or the oven.  Cooking potatoes in an Instant Pot will take half the time as the oven.

​

Sweet potato can freeze easily and hold for several months.

​

When the potatoes have cooled down use a hand held shredder or food processor to get make your potato shreds.

There are so many great garnishes to add to this dish or simple serve in a iron skillet!  Add any of the following:

​

    Chopped fresh chives

​

    Chopped tomato

​

    Diced green onion

​

I like to add a fresh orange slice and fresh berries along with some toast or tofu scramble.  Add a few extra touches and this plate is full of flavor!

Budget Tips

​

The best way to keep costs down for sweet potato hash browns is to cook your own sweet potatoes and shred them yourself.  You can purchase pre-made products but it will cost you three times more than if you were to process your own to cook!

​

Purchasing turmeric or garlic powder in the bulk section of a grocery store typically reduces  your cost by 20-30% when compared to buying a branded spice in a jar.

Storage Recommendations

​

The best ways to store the extra shredded sweet potatoes

​

Place in a glass or plastic container that seals and place in the refrigerator.  The potatoes will remain good for 3-4 days.

​

The best way to keep your shredded sweet potatoes is the freeze them.  If you have room in your freezer sprinkle the shredded potatoes on a sheet pan and place them in the freezer for 2 hours.  Once frozen you can place them in plastic storage bags.  These will last up to 3 months in the freezer.  If you don't have space to use a sheet pan you can place the shredded potatoes in a bag they will just take longer to defrost when you need them.

What to do with left over's or extra product?

​

If I have extra sweet potato hash browns I like to make a protein hash by adding spiced tofu, peppers and onions. 

​

You can grab some tortilla wraps and make a great breakfast burrito or taco with your potato hash & top it off with some guacamole!

​

I would recommend freezing the extra shredded potatoes until you need them.  This will reduce the total cooking time next time you want these delicious hash browns!

Sweet Potato Hash Browns

DIRECTIONS

Preheat the oven to 400 degrees.  Wash the sweet potatoes and wrap them in aluminium foil and place them in the oven.  Bake the potatoes for 40 minutes or until you can easily insert a fork into the flesh of the potato.  Once baked set aside and let cool.  If you have an Instant Pot please see the Instant Pot sweet potato recipe!

Once the potatoes have cooled down, peel the skin of potatoes and discard.  Take each potato and shred by using a manual grater or food processor.  

Add the turmeric and garlic powder to  two cups of the shredded potatoes and mix well.  Pour 2 tablespoons of olive oil into a medium sized saute pan over medium high heat on a cook top.  Once the oil starts crackling add the two cups of shredded potato into the pan.  Cook the potatoes on each side for about 4-5 minutes or until crispy brown.
