2 small single size flatbreads

1/4 cup vegan pesto sauce

1 avocado sliced

1/2 cup tomato cherries cut in half

1/2 cup arugula

To make a quick meal in less than 10 minutes use pre-made flatbreads.  You can add on some quick toppings and eat it at room temperature or heat up in the oven on broil for 1-2 minutes.

You can add the toppings of choice, olives, mushrooms, beans the ideas are limitless. 

A great sauce to use is pesto because it takes great cold or at room temperature or just plain olive oil.

This is a great tool to have in your kitchen if you have a small space to cook and if you want to quickly heat up a pizza or flatbread without using an oven.

Use an easy and safe pizza cutter that takes up half the room in your drawers.  You can cut pizzas, flatbreads or sandwichs.

This dish looks amazing on square or rectangle plates.  A fun dish for date night or to impress your family with an upscale looking vegan meal!  Place your flatbread on one side and chips or a side salad for a wonderful dish!

Plate Presentation

If you have a wood chopping board serve your flatbread in the center and you can place small cups of dipping sauce off to the side.  If you do not have wood cutting board you can use simple plates or rectangle small plates.  Serve with a great side salad and you have a wonderful quick meal for an evening when time is tight and better yet the kiddos can help!

Budget Tips

Purchase your flatbreads in bulk at a club store like Costco if you can.  You can certainly make your own flatbreads as well if you have time and this can save you a little money as well.

If you do not have the specific toppings for this recipe use up the fresh veggies you have on hand or toss on canned olives and nuts that might be stocked in your pantry.

Storage Recommendations

If you have left over flatbreads you can use plastic bags for quick storage.  However if you have full size flatbreads left over and want an upscale look to holding your food use the affordable pizza boxes.  This is great especially for your kids if they have sleep overs or you want to take a flatbread to work.

Food Combinations

A great dish to serve along side of any flatbread is a black bean avocado salad with fresh cherry tomatoes and onion.  You can use several of the same ingredients as this flatbread which makes it a snap.  

The fresh veggies and beans will make up for some of the carbs you will consume with the flatbread!

What to do with left over's or extra product?

If you have left over avocados you can add them to a tofu scramble, make an avocado sandwich or add to a salad.  If there are left over tomatoes a great way to use them up especially if they are almost expired make a tomato confit.  Recipes can be found on our site.  Tomato confits are great additions as pizza sauce or add flavor to salad dressings or a topping drizzled over a plate of vegetables.

DIRECTIONS

If you want to serve your flatbread at room temperature for a summer dish place it on a serving plate or wood board to then assemble.  However if you want to warm it up in an oven place it on a pizza pan.

Once your flatbreads are in place, poor the pesto sauce on each flatbread and spread a thin layer on the majority of the bread.

Cut the cherry tomatoes in half and set aside.  Take the fresh avocado and cut in half around the pit.  Split open and take out the pit with a spoon and make slices lengthwise on each half of the avocado.  Scoop out the flesh leaving the slices intact.

Gather all your toppings and place them on the flatbreads trying to keep them spread out to cover the entire flatbread.  It's best to add the arugula last because its the lightest ingredient.

RECIPE TIPS

To save time purchase your flatbread pre-made this will save a lot of time and is the best way to go if you are in a rush.  If you want to save money and you have time you can make your own flatbread.  Use up any topping you have in your kitchen if you do not have the specific ones on hand.

You can plate the whole flatbread on your serving dish or slice it up with a pizza slicer to serve.  If you intend to heat the flatbread up place in an oven for 4 minutes at 325 or under a broiler for 1 minute.  Once your flatbread is ready serve and eat up!
